Be careful when frying turkeys
By Sallie James

Thanksgiving just wouldn't be the same for many in South Florida without fried turkey, but the Broward Sheriff's Office is warning cooks to be careful they don't get fried themselves.

The super-heated oil in propane-powered turkey fryers can result in fire and burns if the fryer overflows, tips over, or ignites.

Sheriff's Fire Marshal Charles Raiken says the incidence of home cooking fires is about three times the daily average on Thanksgiving.

Cooks need to be careful of how much oil they use to fill the fryer so it doesn't overflow when the turkey is submerged, said Mike Jachles, spokesman for Broward Sheriff's Fire Rescue.

They also need to make sure the unit can't tip, he said.

The Miami-Dade Fire Rescue Department offers the following tips:

Never use turkey fryers on wooden decks or in a garage.

Make sure the fryer is used on a flat surface to reduce tipping.

Never leave the fryer unattended. Most units do not have thermostat controls. If you don't watch the fryer carefully, the oil will continue to heat until it catches fire.

Never let children or pets near the fryer while in use. Even after use, use caution; the oil inside the cooking pot can remain dangerously hot for hours.

Do not overfill the fryer.

Make sure the turkey is completely thawed and be careful with marinades. Oil and water don't mix, and water causes oil to spill over, creating a fire or even an explosion hazard.

I like the oven way and smell it throughout the course and in the house.
