In terms of scene-stealing humor I would have to say Sophia from "The Golden Girls" (the mother of Bea Arthur's character). She consistently delivered some the best one-liners on any sit-com.

Mary Tyler Moore's character on "The Dick Van Dyke Show" was excellent, too.
