Talking Texas Posters Food Ques

I know chicken fried steaks with the gravy are HUGE down there. Ive never had one, but have wanted to make em. Im a B+ chef BTW. So im making them later tonite. They good?? I got a good recipe online I think with the flour/salt/pepper breading dipped in eggs and then making the gravy from the oil that I cook them in. But is there anything specific I should know/use in making them?? Anxious to try them tonite after some cold beers and football..

btw it's made with cube steak. unless you're from austin, they use tube steak there

gravy is a must hus. use brown gravy though. some people make the white gravy with it. and mashed potatoes should also be made with it
