Roman, no dos were used just a 30.06 150gr

Bob, pig already butchered up, can't put it on a spit anymore.

Falcon, it is a boar, not allow to take sows. I'm planning on cooking the leg. The pig is about 160 pounds. unfotunately the only smoker in the house is me.

drove about 4 hours south to San Luis Obispo. right between San Francisco and Los Angeles. we hunted private land, I feel little safer that way. Last thing I need is someone thinking I was a big fat pig.

take a 1/4 cup of paprika, 1/4 cup brown, sugar tbl black pepper, tsp salt, 2 tbl garlic powder, mix it all together and then rub on the ham and let it sit a while mayba all night.
Place the ham in a pan and wrap with foil. Turn oven to 275 and place it in the oven for 5 hours (guessing it a nice size bone in ham). Pull it out and stick a thermometor in it not touching the bone it should be around 135-145 depending how big. pour a cup or two of apple juice over it at this point. you need to cook it to 180 inside temp and let it hold there for an hour. gonna take about 6-7 hours at 275.
Once it reaches that temp pull it out and let it rest for an hour. then it should pretty much fall apart, add some vinegar bbq sauce or what ever you like. gonna be a bit gamey so this method should tame it some for you.

Then after all that rent a uhaul pack your shit and get the hell out of San Fran, you know dam well hawg hunters aint allowed

Thanks Falcon dude. I'll give that a try this weekend. I'm going to apply the rub on Thursday night and cook it Saturday morning. The meat as just a little gamey, not too bad. There are actually a few hunters living here in the SF bay area. Thanks again for the recipe.
