Has anyone ever screwed around with these type of plays? I always like to have a cutesy bet or two on the ledger and this seems to fit.

You can bet on "games" between two teams that aren't playing one another, using points scored as the lone factor.

A few examples are

GB -3 NYG (53)
NO -4.5 NE (57.5)
Phi -1.5 Pit (47)
Ind -3 NE (50)
